My husband pointed out a recipe for brussel sprouts in a cooking mag. It said to top with avocado. Sounded like an unlikely match to me, but holy mackerel Batman! They were awesome!! The avocado dresses them in yummy richness. Try it:
• Blanch halved, washed brussels for a few minutes till tender.
• Sauté in grape seed oil (or evoo)
• Add thyme, garlic and parsley
• Just before they are done splash of white wine to brown up the brussels.
• Remove from heat.
• Toss with fresh diced avocado!
Damn lil-buggers are d-lish!
